Chicken Soup Recipe for My Neighbors Who Have a Beastly Flu

Dahlia's Chicken Soup RecipeMy best friend’s mother, Dahlia, makes the best, best, best chicken soup ever, ever, ever. Dahlia gave us the recipe when we were going to college together. I probably make it once a year if that. And it doesn’t taste quite as magical as Dahlia’s but it’s darn good when you’re sick.

Several of my fabulous neighborhood ladies are sick with a flu. I decided to bring out the ancient chicken soup recipe and see if it would help their condition. Dieting does not have to be about food for releasing the lbs. Dieting can be about healthy eating for a particular condition. And this week’s condition was an epic flu.

Dahlia’s Chicken Soup Recipe

In my typical style I am going to give a recipe that really has no exact measurements.
A Chicken
Water
Parsnips
Carrots
Onions
Dill
Salt and Pepper
Put the chicken in a big pot if you’re feeding a neighborhood full of sick people otherwise a small pot would do. You can put in a whole chicken or just a few chicken pieces. Cover the chicken with water. Boil then simmer until the chicken is seamless (falling apart). Don’t forget to scoop the schmaltz (creepy foamy stuff on top of water) out.

Take the chicken out and remove the meat. Chop vegetables then put them in. Cook broth with vegetables until you feel it is the right time to put the chicken meat in. Not too much dill. It can be overwhelming.

You can add cooked egg noodles or rice if you want but this is a DIETING website so I would not dream of putting white flour or white rice in a soup. Not that this recipe is dietlicious but it is the best tasting stuff when you’re sick. And besides… when you’re sick you don’t eat much anyway. So… put the damn egg noodles in there if you want. I mean… I won’t do it but you sure can if that’s where you’re heading.
